- 2 1/4 cups dashi
- 1 tbsp mirin
- 1 tsp sugar
- 1 tbsp usukuchi soy sauce
- 1/2 tsp sea salt
- 180g dry udon noodles (or flour, water, and salt to make your own)
- 4 inari age (tofu pouches)
- 1 green onion
- 4 slices narutomaki (fish cake)
- shichimi togarashi (optional)
