Ingredients (serves 3)
- 2 tbsp sake
- 1/4 mirin
- 1 tbsp brown sugar
- 1/4 cup soy sauce
- 1/2 block firm tofu
- 5 dried shiitake mushrooms
- 1 package enoki mushrooms
- 2 cups napa cabbage
- 2 cups shungiko (chrysanthemum greens or tong ho)
- 1 leek
- 1 package shirataki noodles
- 1 tbsp vegetable oil
- 12 oz thinly sliced fatty beef
- 2 cups dashi stock
- 2 cups steamed rice
- 2 egg yolks (from pasteurized eggs)
- 3 servings cooked udon (optional)
