Ingredients (serves 3)

  • 2 tbsp sake
  • 1/4 mirin
  • 1 tbsp brown sugar
  • 1/4 cup soy sauce
  • 1/2 block firm tofu
  • 5 dried shiitake mushrooms
  • 1 package enoki mushrooms
  • 2 cups napa cabbage
  • 2 cups shungiko (chrysanthemum greens or tong ho)
  • 1 leek
  • 1 package shirataki noodles
  • 1 tbsp vegetable oil
  • 12 oz thinly sliced fatty beef
  • 2 cups dashi stock
  • 2 cups steamed rice
  • 2 egg yolks (from pasteurized eggs)
  • 3 servings cooked udon (optional)
